Local Nor’wester Maple Roasted Belluz Carrots with Fresh Debruin’s Herbs
- 2.5lbs carrots
- ½ onion
- 2 Tbsp butter, melted
- 2 Tbsp maple syrup
- 1 Tbsp chopped fresh herbs (anything will do here! the freshness of the herbs balances the sweetness of the carrots)
- salt and pepper to taste
Heat oven to 400°F. Slice carrots about 1/4-1/2 in. thick on the diagonal and slice onion into quarters, pulling the “layers” apart. Place your veg in a medium bowl. Whisk together melted butter and maple syrup. Toss carrots & onions in mixture to coat evenly.
Line a baking pan with parchment and spread carrots and onions evenly. Season liberally with salt and pepper Bake for about 20-25 minutes or until softened and caramelized. Transfer to a bowl or a platter, sprinkle over fresh herbs and serve.
