Producer Spotlight: Stanley Hill Bison
Tim Janssens says bison are incredibly efficient grazers. Because they move along as they eat, they rarely eat grasses right down to the ground, helping to keep their pastures as well as themselves healthy. His creatures live completely outdoors, and evolution has made them perfectly capable of enjoying our chilly winters in style – in fact they prefer to stand facing into the wind so they can be protected by their “capes” – the fluffy hair on their foreheads, chests and shoulders.
In our December 2021 show, Tanner from the RFDA showed us how to make Bison Tourtiere using a mix of Stanley Hill‘s ground bison as well as ground pork.
