Tanner’s Brule Creek Butter Pastry

Tanner Harris, Kitchen Manager for the Regional Food Distribution Association, joined us for our December 2021 video to demonstrate how to make a rich and delicious holiday dinner featuring this pie crust.

Ingredients

  • 1 cup Brule Creek partially sifted flour
  • 1 cup ice cold water
  • 1 cup cold unsalted butter
  • 1 tsp salt

Method:

  1. In a large bowl, measure flour and salt.
  2. Cut cold butter into small cubes. Using a pastry cutter, cut the butter into flour mixture until formed into small pea size.
  3. Slowly add ice water and mix by hand, adding water slowly until you can gather dough into a ball.
  4. Cut the ball of dough into 2 equal pieces, shape into discs, wrap and refrigerate until ready to use.
  5. When ready, roll out dough on lightly floured surface, about 1/4″ thick.
