Grilled Radish, White Bean & Walnut Salad
Make the delicious grilled salad brought to us by farmer/chef Chris Groenheide from Tarrymore Gardens in our May 2022 show!
Ingredients
Salad:
- 15 – 20 radishes with tops
- 1/2 C walnuts – raw or roasted
- 1 can white beans
- 3 oz feta cheese
- 1/2 cup fresh dill
- 1/2 cup chives
Dressing:
- 1/2 lemon, juiced
- 2 tbsp Champagne mustard
- 4 tbsp olive oil
- 2 cloves garlic
- s & p to taste
Method:
- Wash and top radishes, setting greens to the side.
- Halve your radishes and toss with a little olive oil.
- Trim and chop your greens; set aside in your salad bowl.
- Chop dill and chives, combine with greens, walnuts and drained white beans.
- Whisk together your dressing ingredients and set aside.
- Grill radishes over medium-high heat for about 3 minutes a side.
- Toss grilled radishes with other ingredients and dressing to taste.
