Stewed Cucumbers

In our March 2022 show, chef Markus Hofmann from Rose Valley Lodge & Restaurant prepares these cucumbers as a side dish to Pork Tenderloin Calvados along with Carrots à la Markus and Scalloped Potatoes.

Ingredients:

Method:

  1. Peel and cut cucumber. We cut in half length-wise and then 1/2” slices.
  2. Place in a small pot and cover with broth.  Add 1 tbsp. butter, cover and cook until soft.
